For the Dressing
  • 8 oz Cream Cheese use room temperature
  • 1 cup Sour Cream or Greek yogurt for a lighter option
  • 2 tbsp Extra Virgin Olive Oil or mild oil
  • 2 cloves Garlic finely grated
  • 1/4 cup Fresh Chives chopped
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Cotija or Feta Cheese or Parmesan
For the Salad Base
  • 8 oz Short Pasta like fusilli or rotini
  • 4 cups Romaine Lettuce shredded
  • 2 cups Fresh Corn grilled or roasted
  • 1/4 cup Fresh Basil chopped
  • 1/4 cup Fresh Cilantro chopped
  • 1 cup Spicy Cheddar Cheese diced
  • 1 medium Avocado sliced, add before serving
For the Chili Butter
  • 1/2 cup Salted Butter or unsalted
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder
  • 1/4 tsp Cayenne Pepper adjust to taste
For the Lime Mayo Dressing
  • 1/2 cup Mayonnaise or yogurt
  • 2 tbsp Lime Juice fresh if possible

Method
 

Step-by-Step Instructions
  1. Make the Dressing: In a large mixing bowl, combine softened cream cheese, sour cream, and extra virgin olive oil. Add in grated garlic, chopped chives, salt, and pepper. Mix until smooth and creamy.
  2. Cook the Pasta: Bring a large pot of salted water to boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and toss in the dressing immediately.
  3. Combine Salad Ingredients: Add lettuce, charred corn, herbs, cheddar cheese, and avocado to the pasta. Fold gently until well mixed.
  4. Prepare Chili Butter: Melt butter in a skillet over medium heat. Stir in paprika, chili powder, and cayenne. Cook for one minute and let cool.
  5. Make Lime Mayo Dressing: Whisk together mayonnaise and lime juice with a pinch of salt until smooth.
  6. Serve and Enjoy: Serve salad warm or chilled, drizzled with lime mayo dressing and topped with chili butter.
