Step-by-Step Instructions for Butter Chicken
  1. In a mixing bowl, combine chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Marinate for at least 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes until golden brown. Flip occasionally and set aside once done.
  3. In the same skillet, reduce heat to medium and add 2 tablespoons of butter. Melt, then stir in minced garlic and diced onion. Sauté for 3-4 minutes until the onion is translucent.
  4. Stir in 1 cup of tomato sauce and 1 tablespoon of sugar, bringing to a gentle simmer for 2-3 minutes.
  5. Return the chicken to the skillet, pour in 1/2 cup of heavy cream, and season with cayenne pepper, garam masala, and black pepper. Let simmer on low for 10 minutes.
  6. Add the remaining 2 tablespoons of butter to the sauce, stirring until melted to create a silky texture.
  7. Serve hot, garnished with freshly chopped parsley. Pair with naan and rice.
