Preparation Steps
- In a saucepan, reduce 3 cups of fresh apple cider with optional mulling spices until thick and reduced to about 1/3 cup.
- Preheat your oven to 350°F (175°C) and prepare your springform pan.
- Combine crust ingredients and press mixture into the prepared pan. Bake for about 10 minutes.
- Beat cream cheese and brown sugar until smooth, then mix in sour cream, vanilla, salt, and reduced cider. Add eggs one at a time, then fold in flour.
- Pour filling into the cooled crust and bake in a water bath for 80-90 minutes.
- Cool gradually in the oven with the door ajar for 30 minutes, then refrigerate for at least 8 hours.
