  • 4 pieces Boneless Skinless Chicken Breasts or Thighs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Sauce
  • 2 cups Fresh Cranberries Fresh is preferred for optimal flavor
  • 1 whole Orange Zest before juicing
  • 1/4 cup Honey or Maple Syrup Low-carb sweetener for sugar-free version
  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh Thyme or Rosemary Fresh is ideal, dried can be used
  • 1 cup Chicken Broth or Water Broth is preferred for depth
  • 1 tablespoon Balsamic Vinegar Optional
  • 1 tablespoon Dijon Mustard Optional

Method
 

Preparation
  1. Pat the chicken dry and rub with salt, black pepper, and fresh herbs. Allow to rest for 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 4-6 minutes on each side until golden and cooked through.
  3. In the same skillet, cook minced garlic for 30 seconds, then add cranberries, orange juice, zest, and sweetener. Simmer for 5-7 minutes.
  4. Return chicken to the skillet, add broth and cover. Cook for an additional 10-12 minutes over low heat.
  5. Plate the chicken and ladle sauce over top. Garnish with fresh herbs or orange zest.
