Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Roll out your pizza crust on a lightly floured surface until it's about ¼ inch thick and transfer to a baking sheet or pizza stone. Brush with olive oil.
  3. Combine the shredded chicken with cranberry sauce in a medium mixing bowl until coated.
  4. Spread the cranberry chicken mixture evenly over the crust, leaving a border. Layer on the Brie, mozzarella, and red onion.
  5. Drizzle olive oil over the toppings and season with thyme, salt, and pepper.
  6. Bake in the preheated oven for 12 to 15 minutes or until the cheese is melted and golden.
  7. Let the pizza cool for a couple of minutes and top with fresh arugula or spinach before serving.
  8. Slice the pizza into wedges and serve immediately.
