Preparation Steps
- Preheat your oven to 425°F (220°C). Scrub the sweet potatoes and pierce them with a fork several times.
- Rub each sweet potato with olive oil and a sprinkle of salt. Arrange on a lined baking sheet.
- Roast the sweet potatoes for 40 to 45 minutes until very tender.
- In a skillet, heat butter and caramelize diced apples for 2 to 3 minutes without stirring.
- Add cranberries, brown sugar, cinnamon, nutmeg, and a pinch of salt to the skillet, cooking for 5 to 7 minutes until syrupy.
- Let sweet potatoes cool for 5 minutes, then slice lengthwise and fluff the insides.
- Fill each sweet potato with the warm apple and cranberry mixture and return to the oven for an additional 10 minutes.
- Garnish with toasted pecans and thyme, then drizzle with maple syrup before serving.
