Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pierce each sweet potato several times with a fork and bake for 45-50 minutes until soft.
  3. Allow sweet potatoes to cool for 10-15 minutes. Heat a skillet over medium heat.
  4. Melt a tablespoon of butter in the skillet, then add diced apple, cranberries, nutmeg, cinnamon, and salt; sauté for 5-7 minutes.
  5. Stir in maple syrup and cook for an additional 2 minutes.
  6. Slice each baked sweet potato in half lengthwise and scoop out the flesh.
  7. Mash the sweet potato flesh in a bowl and fold in half of the cranberry-apple mixture.
  8. Spoon the mixture back into sweet potato skins and top with remaining cranberry-apple mixture.
  9. Bake the stuffed sweet potatoes for another 10-12 minutes until heated through.
