Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) while you prepare your ramekins. Spray the insides with olive oil.
  2. Spoon approximately 1/3 cup of cottage cheese into the bottom of each greased ramekin and spread evenly.
  3. Sprinkle garlic powder, dried oregano, and optional crushed red pepper flakes over the cottage cheese.
  4. Pour 1 to 1.5 tablespoons of low-sugar marinara sauce over the seasoned cottage cheese.
  5. Layer shredded mozzarella and grated Parmesan cheese over the marinara sauce completely.
  6. Top each ramekin with four mini pepperoni slices, arranged in a circle.
  7. Bake in the preheated oven for 12–15 minutes until the cheese is melted and starting to turn golden brown.
  8. Allow any leftovers to cool completely, then store in an airtight container in the fridge for up to three days.
