- Preheat your oven to 400°F (200°C) while you prepare your ramekins. Spray the insides with olive oil.
- Spoon approximately 1/3 cup of cottage cheese into the bottom of each greased ramekin and spread evenly.
- Sprinkle garlic powder, dried oregano, and optional crushed red pepper flakes over the cottage cheese.
- Pour 1 to 1.5 tablespoons of low-sugar marinara sauce over the seasoned cottage cheese.
- Layer shredded mozzarella and grated Parmesan cheese over the marinara sauce completely.
- Top each ramekin with four mini pepperoni slices, arranged in a circle.
- Bake in the preheated oven for 12–15 minutes until the cheese is melted and starting to turn golden brown.
- Allow any leftovers to cool completely, then store in an airtight container in the fridge for up to three days.
