Preparation

- Spread the cottage cheese evenly across the bottom of a medium-sized baking dish.
- Spoon marinara sauce over the cottage cheese and spread it evenly.
- Evenly scatter the chopped bell peppers, sliced mushrooms, and chopped spinach or kale over the marinara sauce.
- Sprinkle shredded mozzarella cheese generously over the vegetables.
- Drizzle olive oil on top and sprinkle salt and pepper to taste.
- Bake in the preheated oven for 20-25 minutes until bubbly and golden brown.
- Allow to cool slightly before serving, optionally garnishing with fresh basil.
