  1. In a large mixing bowl, add 1 cup of cottage cheese and 1 can of drained and rinsed chickpeas. Gently stir together until well blended.
  2. Chop 1 cucumber and halve a handful of cherry tomatoes, then add them to the bowl. Finely dice 1/4 of a red onion and fold into the salad.
  3. Finely chop a handful of fresh parsley and mix it into the salad, ensuring even distribution.
