- In a mixing bowl, combine olive oil, minced garlic, Italian seasoning, onion powder, salt, pepper, and lemon juice to create a flavorful rub for the chicken.
- Spray the slow cooker with non-stick cooking spray. Layer halved baby potatoes at the bottom, sprinkling with additional salt and pepper. Place the seasoned chicken on top of the potatoes. Pour the chicken broth over the potatoes and scatter butter chunks over the chicken.
- Cover the slow cooker and set to COOK on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, testing for doneness.
- About 30 minutes before cooking is complete, add trimmed green beans over the chicken and potatoes, re-covering the slow cooker.
- Once cooked, transfer the chicken, potatoes, and green beans to plates. Spoon some broth over the dish and garnish with lemon juice and parsley if desired.
