Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Scrub the large russet potatoes under cold water. Pierce each potato several times with a fork to allow steam to escape. Rub with olive oil and sprinkle with salt and pepper.
  3. Place the prepared potatoes on the oven rack or baking sheet. Bake for 45-60 minutes until soft.
  4. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 8-10 minutes. Drain excess fat.
  5. Add taco seasoning and specified water. Stir and simmer for about 5 minutes.
  6. Remove baked potatoes, slice each lengthwise, and fluff the insides.
  7. Spoon the beef mixture into each potato. Top with shredded cheddar cheese.
  8. Return to the oven for an additional 10-15 minutes until cheese is melted.
  9. Top with sour cream, green onions, diced tomatoes, olives, and cilantro.
  10. Serve hot with additional salsa on the side.
