Step-by-Step Instructions
- Preheat your oven to 400°F (200°C).
- Scrub the large russet potatoes under cold water. Pierce each potato several times with a fork to allow steam to escape. Rub with olive oil and sprinkle with salt and pepper.
- Place the prepared potatoes on the oven rack or baking sheet. Bake for 45-60 minutes until soft.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 8-10 minutes. Drain excess fat.
- Add taco seasoning and specified water. Stir and simmer for about 5 minutes.
- Remove baked potatoes, slice each lengthwise, and fluff the insides.
- Spoon the beef mixture into each potato. Top with shredded cheddar cheese.
- Return to the oven for an additional 10-15 minutes until cheese is melted.
- Top with sour cream, green onions, diced tomatoes, olives, and cilantro.
- Serve hot with additional salsa on the side.
