- Begin by melting 3 tablespoons of butter in a medium saucepan over medium-low heat. Add ⅛ teaspoon of red pepper flakes and let the mixture cook gently for about 5 minutes.
 - Transfer the melted butter mixture to a bowl and set it aside for spreading.
 - Using a pastry brush, spread the melted butter mixture generously on one side of each slice of bread.
 - Heat the same saucepan over medium heat and add one slice of the buttered bread butter-side down.
 - Layer 2 ounces of crumbled goat cheese and 2 ounces of shredded white cheddar over the bread. Drizzle 1 tablespoon of honey on top and cover with the second piece of bread buttered side up.
 - Cook the sandwich on medium heat for about 5 to 7 minutes, then cover the pan with a lid to help the cheese melt.
 - Carefully flip the sandwich and cook for an additional 3 to 5 minutes until both sides are golden brown and crisp. Drizzle with the remaining tablespoon of honey and serve warm.
