Step-by-Step Instructions
  1. Begin by melting 3 tablespoons of butter in a medium saucepan over medium-low heat. Add ⅛ teaspoon of red pepper flakes and let the mixture cook gently for about 5 minutes.
  2. Transfer the melted butter mixture to a bowl and set it aside for spreading.
  3. Using a pastry brush, spread the melted butter mixture generously on one side of each slice of bread.
  4. Heat the same saucepan over medium heat and add one slice of the buttered bread butter-side down.
  5. Layer 2 ounces of crumbled goat cheese and 2 ounces of shredded white cheddar over the bread. Drizzle 1 tablespoon of honey on top and cover with the second piece of bread buttered side up.
  6. Cook the sandwich on medium heat for about 5 to 7 minutes, then cover the pan with a lid to help the cheese melt.
  7. Carefully flip the sandwich and cook for an additional 3 to 5 minutes until both sides are golden brown and crisp. Drizzle with the remaining tablespoon of honey and serve warm.
