- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine 3 cups of all-purpose flour, 1 teaspoon of baking soda, and 1 teaspoon of salt.
- Add ¼ cup of chopped fresh chives, along with 2 tablespoons each of chopped fresh thyme, rosemary, and sage, and fold in 1 cup of shredded cheddar cheese.
- Pour in 1 ¼ cups of buttermilk, and gently stir until just combined.
- Turn the dough out onto a floured surface and gently knead it a couple of times.
- Flatten the dough into a circle about 7 inches in diameter and score a cross on the top.
- Transfer the shaped dough onto a floured baking sheet and dust the top with flour.
- Bake for 15 minutes at 425°F, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes.
- Once baked, remove from the oven and wrap in a clean tea towel to cool.
