- Preheat your oven to 350°F (175°C) and spray a 9x13 inch baking pan with cooking spray.

- Fold in the diced apples, butterscotch chips, and nuts. Keep about 2 cups of this dough for later.
- Press the remaining blondie dough evenly into the bottom of the baking pan.
- In a separate bowl, beat together cream cheese, sugar, egg, and vanilla until smooth. Pour over the blondie base.
- Spoon the reserved blondie dough over the cheesecake layer in dollops.
- Bake for 50-55 minutes for regular flour or 55-60 minutes for gluten-free, until golden brown.
- Let cool for 15 minutes before drizzling with caramel topping.
