Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add cheese-filled tortellini and cook for 7-9 minutes until floating and tender. Drain and toss with olive oil.
  2. In a skillet, melt 3 tablespoons of butter over medium-high heat. Add crushed garlic and sauté for 30 seconds. Add beef chunks, season with salt and pepper, and sear for 2-3 minutes on each side until golden brown. Remove steak and set aside.
  3. In the same skillet with drippings, melt 2 tablespoons of butter over medium heat. Pour in heavy cream, bring to a simmer, and whisk in Parmesan cheese. Cook for 5-7 minutes until thickened. Season if needed.
  4. Add cooked tortellini to the skillet, gently folding into the sauce. Allow to sit for 1-2 minutes off heat.
  5. Plate tortellini topped with steak chunks and drizzle any remaining sauce over. Garnish with parsley or extra Parmesan cheese.
