Ingredients
  

For the Pudding Base
  • 2 cups Milk of Choice Use non-dairy milk for vegan option
  • 2 tablespoons Black Tea Leaves Any type of black tea can be used
  • 1/4 cup Dark Brown Sugar Light brown sugar can be substituted
  • 1 teaspoon Vanilla Optional but recommended
  • 1/3 cup Chia Seeds Choose between black or white
For the Salted Foam
  • 1 cup Whipping Cream Use non-dairy for vegan option
  • 1 pinch Salt Just a pinch adds delightful contrast
  • 2 tablespoons Additional Brown Sugar Adjust to taste

Method
 

Preparation Steps
  1. In a small saucepan, heat 2 cups of your milk of choice over medium heat until steaming, but not boiling.
  2. Add 2 tablespoons of black tea leaves and steep for 5 minutes.
  3. Strain the mixture through a fine sieve to remove the tea leaves.
  4. Return the strained milk to the saucepan and stir in 1/4 cup of dark brown sugar, 1 teaspoon of vanilla extract, and a pinch of salt.
  5. Continue to stir until the sugar completely dissolves.
  6. Transfer the warm milk tea mixture into a bowl and place it in the refrigerator for 15 minutes.
  7. After cooling, gently stir in 1/3 cup of chia seeds.
  8. Pour the mixture into individual serving glasses, filling them about three-quarters full.
  9. Cover each glass with plastic wrap and refrigerate for at least 3 hours.
  10. In a mixing bowl, whip 1 cup of heavy cream with a pinch of salt and 2 tablespoons of additional brown sugar until soft peaks form.
  11. Generously top each serving with a dollop of salted foam before serving.
