  • 1/2 teaspoon salt can be omitted in low-sodium diets
  • 1 teaspoon baking soda ensure it’s fresh
  • 2 large eggs lightly beaten
  • 1 cup pure pumpkin puree make sure it’s pure, not pie filling
  • 1/2 cup natural style applesauce can be substituted with mashed banana
  • 1/2 cup light brown sugar maple syrup can be used as an alternative
  • 1 teaspoon vanilla extract opt for pure when possible
  • 1/2 cup pepitas can be replaced with sunflower seeds
  • 1/2 cup chopped pecans can be omitted or replaced with walnuts

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, greasing it lightly.
  2. In a medium bowl, combine flour, rolled oats, pumpkin pie spice, salt, and baking soda, whisking until well-blended.
  3. In a large bowl, beat the eggs and add pumpkin puree, applesauce, brown sugar, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula to combine.
  5. Fold in half of the pepitas and chopped pecans, then pour the batter into the prepared baking pan and spread evenly.
  6. Sprinkle the remaining pepitas and pecans on top before baking.
  7. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean; edges should be slightly golden.
  8. Cool the bars in the pan for 10-15 minutes before lifting out and cooling completely on a wire rack. Slice and enjoy!
