- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, greasing it lightly.
- In a medium bowl, combine flour, rolled oats, pumpkin pie spice, salt, and baking soda, whisking until well-blended.
- In a large bowl, beat the eggs and add pumpkin puree, applesauce, brown sugar, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula to combine.
- Fold in half of the pepitas and chopped pecans, then pour the batter into the prepared baking pan and spread evenly.
- Sprinkle the remaining pepitas and pecans on top before baking.
- Bake for 25-30 minutes until a toothpick inserted in the center comes out clean; edges should be slightly golden.
- Cool the bars in the pan for 10-15 minutes before lifting out and cooling completely on a wire rack. Slice and enjoy!
