  • 2 pieces Boneless, skinless chicken breasts
For the Orzo
  • 1 cup Orzo pasta gluten-free pasta can be used as a substitute
  • 3 cups Chicken broth vegetable broth or water with bouillon can be used
For the Vegetables
  • 1 cup Cherry tomatoes halved
  • 1 cup Zucchini diced
  • 1 piece Bell pepper diced, any color
  • 1 piece Red onion chopped
For Flavor
  • 3 tablespoons Balsamic vinegar
  • 2 tablespoons Olive oil or avocado oil
  • 2 cloves Garlic minced
  • 1 teaspoon Dried oregano can substitute with Italian seasoning if needed
  • Salt to taste
  • Pepper to taste
For Garnish
  • 1/4 cup Fresh basil chopped

Method
 

Step-by-Step Instructions for Balsamic Chicken & Veggie Orzo
  1. Season the chicken breasts with salt, pepper, and half of the dried oregano. Heat olive oil in a skillet and cook the chicken for 6-7 minutes on each side until golden and cooked through. Remove and let rest.
  2. In the same skillet, add red onion and sauté for 2-3 minutes until soft. Stir in minced garlic and cook for another 30 seconds.
  3. Add diced bell pepper and zucchini, cooking for 3-4 minutes until slightly softened. Mix in orzo, stirring to coat.
  4. Pour in chicken broth, bring to a boil, then simmer covered for 10-12 minutes until orzo is tender and liquid is absorbed.
  5. Slice the rested chicken and add it back along with cherry tomatoes and balsamic vinegar. Stir and heat for 2-3 minutes.
  6. Serve the dish garnished with fresh basil.
