Preparation
- Preheat your oven to 400°F (200°C). Let it warm up for about 10-15 minutes.
- In a large mixing bowl, combine the shredded chicken, refried beans, salsa, cilantro, chili powder, shredded cheese, green onions, and jalapeños. Stir until well mixed.
- Lay out your flour tortillas and fill each with the chicken mixture. Fold and roll tightly to enclose the filling.
- Place each rolled chimichanga seam-side down on a greased baking sheet.
- Melt butter and brush the tops of the chimichangas generously.
- Bake in the preheated oven for 15 minutes, then flip each chimichanga and bake for another 10 minutes until golden-brown.
- Let cool for 5-10 minutes before serving warm with your favorite toppings.
