- In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, chopped parsley, thyme, rosemary, garlic powder, and onion powder; mix thoroughly.
- Create a pocket in each chicken breast by slicing horizontally and stuff with Boursin cheese.
- Secure any openings with toothpicks to keep the cheese inside during cooking.
- Brush each stuffed chicken breast with olive oil, then press the breadcrumb mixture onto the chicken.
- Place coated chicken breasts into the greased baking dish and drizzle with melted butter.
- Bake for 30-35 minutes until golden-brown and an internal temperature of 165°F (74°C) is reached.
